Many students, especially at the high school level, are trying to work out who they are and who they are going to be. For this reason, projects that involve the concept of "identity" often provide an engaging outlet for this exploration. Of course, Identity projects can come with many variations on theme and medium, but perhaps one interesting example to explore would be the "Age Maps" by Bobby Neel Adams. These photocollages of the same people at different stages of their lives are alternately haunting, creepy, thought-provoking, and strangely uplifting.
