Here are a couple of great stop motion videos - both very different, in style and content. These would be excellent examples of how much variety you could get out of a lesson in stop motion animation.
This first one has a great website which includes a 'making of' video.
This next one is also very clever- Full disclosure: I have never been choked up by anything on a lite-brite screen before.
